Mark is the Director of the Rockland Community College Hospitality & Culinary Arts Center, located in the same building as our Nyack bakery. With decades of experience in hospitality consulting and food service operations, Mark has held leadership roles at Manhattan By Sail, Café Habana (where he opened locations in Tokyo, Dubai, and Brooklyn), and Statue Cruises, managing operations for 4 million annual visitors.

As our Board Treasurer, Mark provides financial oversight and strategic guidance on operational scaling and facility management. His deep connections in Rockland County's culinary community and his genuine passion for artisan food producers make him an invaluable champion for our mission. Mark has publicly declared that we make "some of the best sourdough bread you will ever have in your life"—and he's helped introduce our bakers to the wider culinary community through teaching opportunities at RCC.
